I really love udon because of its chewiness but if that’s not your cup of tea, then feel free to swap it out for any type of noodle your heart desires (spaghetti or bucatini would work too). The star of the show is the spicy yet luscious nutty sauce that comes with it.
This Spicy Peanut Butter Udon recipe is exceedingly simple but a genuinely delicious quick fix. It is actually taking me longer to write this than to cook and finish this bowl of noodles, that’s how simple the recipe is! Feel free to also adjust the level of spiciness, or add in some meat and vegetables. This recipe is one that you absolutely need in your back pocket, especially for those days that you just can’t.
5 minutes to flavour heaven with these thick chewy noodles, coated in the most delicious nutty and spicy sauce. Cook the noodles in a pot of boiling water as per the package instructions. In the meantime, add the peanut butter, dark and light soy sauce, vinegar, sambal, sesame oil, hot water, garlic and ginger into a bowl and microwave it for 30 seconds. If you don’t have a microwave, just heat it up over the stove (obviously in a pot) and mix until combined. If the sauce is too thick for your liking, thin it out with some hot water. Drain the noodles and while they are still hot, pour the sauce over it and toss to combine. Spoon the noodles into your serving bowls, garnish with the spring onions, chilli and sesame seeds, and serve straight away. Spicy Peanut Butter Udon
