I absolutely love brownies and am extremely fussy about the ones I eat – all the components have to be right otherwise they’re just not worth the calories #truth. These, my friends, are THE ONES. They are everything you want in a perfect brownie – indulgent, fudgy, insanely chocolatey, and finished with a beautiful crackly top (p/s I know you’re drooling).

Why gluten free you ask? Well this is a birthday surprise for my dearest Lottie and bless her heart, she’s gluten intolerant. I promised her brownies a year ago for her birthday but the recipe I followed was absolute shait. Since then, I’ve probably eaten shared countless trial batches – I didn’t want gooey, fall-apart, stick-to-your-front-teeth brownies. I also didn’t want heath-ified brownies or some sort of fusion brownie (yes I’m looking at you brownie cheesecake). After a full year of trial and error, I’m so happy to say that I have finally developed the perfect gluten free brownies recipe, you are welcome.

I have to warn you though, you may end up finishing the entire tray in one sitting.

Extra Fudgy Gluten Free Brownies

Serves: 9 Brownies

Pure. Chocolate. Heaven.

Ingredients

  • 100g unsalted butter
  • 300g dark chocolate
  • 1 teaspoon sea salt
  • 3 eggs
  • 150g caster sugar
  • 50g light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee granules
  • 100g gluten free flour (use plain flour for a non-GF version)
  • 100g toasted walnuts/pecans, chopped

Instructions

Preheat the oven to 170°C. Grease and line a 17x17 cm baking tin with parchment paper.

In a heatproof bowl over a pot of boiling water (ensure that the bottom of the bowl is not submerged in water), melt the chocolate and butter together until melted and smooth. Add salt and stir to combine. Remove from heat and leave aside to cool.

In another bowl, whisk the eggs with the sugars and vanilla extract until lightly bubbly on top. Add the egg mix into the chocolate mix and stir to combine. Add the flour, coffee granules and nuts into the mix and stir until just combined.

Pour the mixture into the baking tin and spread it out as evenly as you can. Bake for 25 minutes or until a skewer comes away clear. Let cool (or not) and enjoy!
